There is nothing more comforting than an old, worn and stained recipe card. You can truly feel the baked love through the faded handwriting of mothers long ago.

Summer Chopped Salad

So refreshing!

½ tsp. garlic salt
¼ tsp. pepper
2 C. cucumbers, seeded, chopped into fine cubes
2 C. tomatoes, seeded, chopped into fine cubes
¼ C. red onion, chopped fine
½ C. fresh basil, minced
1/3 C. feta cheese
1 ripe avocado, cubed

Combine all ingredients in a mixing bowl. Pour dressing over the salad to taste, mix thoroughly, refrigerate till ready to serve.

Dressing – Marzetti’s lemon vinaigrette, lemon zest, 2 Tbsp. shaved parmesan cheese (optional).
