These yummy muffins are the perfect to accompany any meal, but are especially wonderful paired with our creamy Mac & Cheese.
 

Variations - Use your favorite berries, or what is in season, to dictate your berry choices. All of the citrus flavors work wonderfully in this recipe! 

• 1 egg
• 1 cup of milk
• 1 1/4 cup fresh berries – cranberry, raspberry, blackberry or blueberry
• ¼ cup vegetable oil
• 2 cups of Gold Medal all purpose flour
• ¼ cup sugar
• 1 Tablespoon grated zest – choose orange, lemon or lime or a combination
• 3 teaspoons of baking powder
• 1 teaspoon of salt 

Heat oven to 400 derees. Line 12 medium cup muffin pan with liners. Beat egg, stir in milk, orange zest and oil in large bowl. In a medium bowl mix flour, salt, sugar, baking powder, salt and berries. Stir flour mixture into egg milk mixture just until completely mixed. Batter will be lumpy. Spoon in muffin tins. Bake until golden brown, 20-25 minutes. Wait five minutes, remove from pan.
